  1. These sound delicious. I have another muffin recipe for you from Aunt Kathleen….not sure what the points would be but they are full nutritional fiber. Also out of curiousity….I know some people say you can subsitutue applesauce for the “fat” content, have you ever tried it? Does it taste good?

    1. I’d love to try her recipe! I’ve tried applesauce instead of oil before, but it’s been a while. I have some in the freezer so I might try it next time I make these…I’ll let you know how it goes.

    Try grinding your own flour. I have a Vitamix that I use and grind my soft wheat grains as I need them. OH SO GOOD! Can’t wait to try your recipe! Do you know how many points plus it is?

    1. Thanks, Kristy! With only 2 tablespoons of oil, I wasn’t sure how they’d turn out, but I think the buttermilk made the difference. Today’s the third day since I made them and they’re still very moist.
