
I love weekends like this: no where to go, nothing to do, lots of time for family and of course cooking! Tonight Josue requested Asian for dinner so I decided to try out a recipe from my Fine Cooking magazine – Spicy Pork Peanut Noodles. I made a few adaptations so here’s my version.

Spicy Pork Peanut Noodles
Serves 3-4
- 1/2 pound wide rice noodles
- 3/4 pound boneless pork chops
- 1 teaspoon olive oil
- 1 teaspoon sriracha sauce
- 1 1/2 teaspoons fish sauce
- 1 jalapeno, finely chopped
- 1 large carrot, julienned
- 1 cup shredded cabbage
- 1/2 cup chunky peanut butter
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 4 scallions, chopped
- 2 tablespoons chopped peanuts
Bring a large pot of water to a boil and add the rice noodles. Cook for 3-4 minutes, until the noodles are al dente. Drain the noodles and rinse with cold water to stop the cooking. (If you overcook the noodles, they will become sticky.) Meanwhile, cut the pork into thin strips. To a large skillet over medium heat add the olive oil, pork, sriracha sauce and 1/2 teaspoon of the fish sauce. Cook for about 4 minutes and add the jalapeno, carrots and cabbage. Continue cooking until the vegetables are tender, about 5 more minutes. In a small bowl, mix the peanut butter, vinegar, the remaining teaspoon of fish sauce and the sesame oil. Once the pork and vegetables are cooked, add them to the pot with the noodles. Add the peanut butter mixture and mix to combine. Top with scallions and chopped peanuts.
