Then I made us some nice and warm broccoli cheese soup. I can’t get enough soup lately! Over the last few weeks I’ve made potato soup, carrot soup, chicken tortilla soup and white chili. Here’s how to make the broccoli soup.
Broccoli Cheese Soup
- 4 tablespoons butter
- 1 small onion, chopped
- 1/4 cup flour
- 2 cups chicken or vegetable stock
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup parmesan cheese
- 2 cups chopped broccoli
In large pot, melt the butter over medium heat. Add the chopped onion and cook it for about three minutes until the onion is translucent. Add the flour and let it cook for about a minute. Whisk in the stock. In a small saucepan, heat the milk and the cheeses, until the cheeses are melted. Add the milk mixture to the large pot. Add the broccoli and allow the soup to simmer for a few minutes before serving.
